What is a Fajita? |

A Fajita is a meal where by meat, poultry, vegetables and other ingredients are cooked over an open fire or more commonly these days, grilled together and packaged in a flour based tortilla wrapping. It is regarded as a Tex-Mex cuisine although credit should really go to the Mexican workers who created the dish whilst working and living in Texas, USA. The use of the word Fajita has evolved over time, with the name encompassing the cooking of, and not just referring to Beef. And so we now have Chicken Fajitas, Steak Fajitas, Shrimp Fajitas and more. It is now thought that anything wrapped in a flour tortilla is a Fajita but in truth, only when the meat is skirt steak is it a "true" Fajita. Originally, and still today, the meat is usually cut into strips, and placed into the wrap with the inclusion of a selection of vegetables, with Bell Peppers and Jalapenos being among the most popular.
It is believed to have been Sonny Falcon who operated the first commercial Fajita taco stand in Kyle, Texas in 1969.
